Well... I'm afraid I cannot pick just one, because he has so many incredible tunes, but I can tell you a few of my favorites:
I Feel Free - with Cream
Forever Man
Have You Ever Loved A Woman? - I saw him do this live... Amazing cover!
Old Love - from 'Journeyman'
I saw Clapton live in concert in 1988, and then again in 1997... I have to say that the '97 concert was probably the best sounding concert I have ever heard in my life... incredible music from a legendary artist, with perfect sound... a wonderful night.

It was on a live jam album around the time of Derek and the Dominoes. It may, I believe it did, have had Duane Allman on it. Anyway it is my favorite Clapton album. The song was Roll it Over. Ialso like Bell bottom Blues. I liked it because the jams weren't planned.

I like some of the old stuff the best, I'll go with Sunshine of Your Love and White Room from his Cream days. I've always had a soft spot for Sixties music.

"Tears in Heaven" because it's a touching tribute to the young son he lost when he fell to his death.
One can feel the pain he endured from the loss within the lyrics, yet he holds hope for someday being reunited with his child.
How he sang that without choking up shows his inner strength.
