I usually make a pretty big meatloaf.
2 lbs of ground beef
2 eggs
1/4 cup of ketchup
2 Tbs of chili sauce
3 carrots grated
1 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder
2 tsp Worcestershire sauce (optional)
Mix together well, pack into a loaf in a baking dish.
Bake at 350 for 1 1/2 hours until done. To check to see if it is done stick a meat thermometer in the center of the loaf after you remove from oven.
*note~ sometimes I will use 3/4 cup of oatmeal to bind the meatloaf together if I don't have carrots. Bread crumbs work great too. My favorite for leftover meatloaf are sandwiches..

Enjoy !
