I read somewhere that if a guy touches his tie(which is meant to be the 'arrow to his penis') it means he's thinking about sex.
Well a guy I work with adjusted MY tie telling me to "do it up a bit".Does this mean anything?

No, this means you are thinking about sex.
Actually, body language does not give you much that you can make use of. It just gives you an idea about what is going on in the unconscious mind. But this does not mean necessarily that they are going to act that way... There is still the filter of their ego and super ego to go through.
