Opal - Besides being my birthstone, I love the play of colors inside, which, depending on the type of opal "Fire", "Black", etc. have a different background to them.
Diamond - Only those of the best cut and clarity, preferably from the 1920's or 30's where the display of colors is just stunning!
Peridot/Olivine - the variation in the green to yellowish tinging depending on the Mg/Fe ratio is immense. It has a nice hardness to it as well as toughness which both Opal and Diamond don't have. It can be found as an extremely clean stone and that green/yellow combination reminds me of a pair of beautiful eyes (the irises of course, not yellowed whites which would indicate jaundice).

Labradorite and Alexandrite
These too gemstones change colors. I believe the Labradorite changes by mood and it is also a natural gemstone.

Pink Tourmaline - Works on the heart, increases the will to love and to sacrifice.
Plus it's color is pink my favorite color.
