it's a mix of "you become like the people you associate with" and "if you tell the same lie often enough people will assume it's true"
it is called cultural programming. present something as harmless, positive or "right", then feed it to them constantly. eventually they will embrace the philosophy and ideology that you wish to program them with. the thing is, it has to be subtle - don't make the lie too obvious, or the science too shabby. this works everywhere, unless your target audience is cluey and questions everything.
take for example, climate change, the content presented in movies, magazines, music, advertising, you can look to the nazi regime and the bush regime as examples of this.
the other thing is, it can take a lot of time. eventually the frog in the pot will be nicely boiled.

As I've often noticed, people seem to assume your questions ask for answers as to what you'd like to do! Putting that aside, as I don't perceive them this way~
I can't comprehend why anyone would want to change the belief of another, without their "knowing." In civil debate, when I have an opposing view to another, I'll offer my reasons, & if those reasons "ring" any little bells, fine. If not, fine, too. In civil, rational dialogue, I've gained insights from another & explored my views further. I've always welcomed insight, but not everyone does. We need to respect, if not agree, & when to "back off" as beliefs should never be competitive.
Other than some sort of bizarre sort of brain washing, I haven't the slightest idea, or would want to.

In mine it would be easy. Just drop a book that proves me wrong or even hints that I may have gone in the wrong direction. I read everything! One of my pastors used to tell me that he couldn't understand why I am a Christian when I try so hard to dis-prove Christianity! I am not in it for the comradeship! I am in it for the truth , the wisdom, the whole ball of wax! Although yes, I enjoy the closeness of the fellow believers! But, my beliefs are not like any one else's. I don't interpret passages the same as those I hang with. They are just the one's who I feel are closest to the truth. No one including myself has "the" true interpretation. No one can. That's why the heart is put to work to "feel" our way through the fog.

Why would you want to? A persons beliefs are personal usually developed over years and years of information and things that happen to them. Why would you just want to change them? But if you really need to, the only real way is to find subtle ways for them to hear about it. If your like my cousin with her husband, bribe your friend to send out an email to him about what you want to change and maybe they will read it. But good luck, im a christian democrat in favor of abortions and gay marriage and feels we need to keep ILLEGAL immigrants out of the country. I dont care about the legal ones, be here if you want, and no matter what anybody says they arent changing unless i read more about the different side and feel that that side is right. Give them information and if they read it and agree with it then they will change.

Yes. That is done by subtle leads and hints, gentle coaxing and persuasion. One would have to put in a lot of effort and time to achieve that end single-mindedly.
But I have been told by someone that I was instrumental in changing his beliefs without MY knowledge, simply by observing and following my example...

Probably possible but it would take a tremendous amount of time & manipulation. You would need to make them believe it was their decision to change, & you would have to be real good to get it past them. Drugs would help, but it is a misuse of a positive talent Which I would think can only make you lower in your view of self. It is control in the ultimate form & just not worth the energy. I would rather work on myself, it is much easier.

Change the circumstances around him/her so that they believe they see things that are not really there. It is Plato's Cave Allegory used to your advantage where he/she is chained to the rock looking at shadows you create on a wall which is all he/she can see.
Then again you could just flash them and they will lose their mind, at which point they will think anything you want in the hopes that you will do it again.
People, in particular men, will believe anything if they think there is sex in it for them.
Perhaps all you need is to bait them into believing what you want them to believe.

They use Fluanxil in the hospitals for the sych. patiant's .Trust me it changes there belief's.
