I have a Gibson Les Paul, and a Martin Acoustic, but it doesnt say anywhere on the gutiar what model it is (ie class). How can I find this out??

Most guitars have a number or model name hidden somewhere.
In acoustics you find it (mostly) under the hole under the strings.
Search your guitar over, inside and out, for a set of numbers or a name, in all places it might be hidden.
If the piece of paper on which it is written got lost, (sometimes the glue fails) and you can not find a name or number on the guitar at all you can go to any of the many sites where they offer guitars for sale and search for the ones that look most like the one you have.
Both Gibson and Martin are well known makes and should be easy to find on-line.
