reason is I was going to start a project where I make a ping pong table out of bottle caps then cover it with plexiglass. however I am worried it will not bounce well enough on plexiglass

A ping-pong ball will bounce off of almost any hard surface. Just get a thick piece of plexiglass that doesn't bend easily and reinforce the edges of each piece (two piece folding table vs. one sheet) for stability. Don't forget to countersink the screws so the top is flat! Then you can mount whatever you like underneath, add the legs, and you're in business! Good luck.

Make sure the plexiglass is not able to flex. If you use thin plexiglass you might want to support it in several spots in the middle of the table. If you can test the table before the final construction (that is, if you can unscrew the tabletop, or place it without glue) you can test first and if needed later add the supports if needed.
