Shubunkin can tolerate water temp down to 55 degrees. They could survive in cooler water, but not for long. 60 - 75 degrees is the best temp range for these fish. If your going to keep it outdoors in the fall/winter and your pond water freezes, get a heater for the pond so the water can stay about 55 - 60 avg.

Goldfish can survive temperatures to 38-39oF (4oC). That roughly the temperature of the bottom of a pond that's frozen over (regardless of the air or surface temperature). As long as the water doesn't freeze completely, the goldfish will stay alive.

Some other items to note, though, is that once the water temperature goes below 55oF, cut back on feeding and particularly reduce the protein-based foods because the fish will have a harder time digesting these. Stop feeding altogether once the water temperature goes below 50oF.

if properly acclimated, shubunkin can overwinter in a pond
as long as it is deep enough to not freeze solid
I live in Alabama and raise shubunkins outside in ponds
sometimes we get some good ice storms and the ponds freeze up - just remember not to feed the fish after the water temp gets below 50 degrees
good luck

Real goldfish can withstand being frozen for the winter and still survive but I don't think the shubunkins and fancier breeds are this easily forgotten. Growing up on the farm and in a farming community I have seen many regular goldfish in stock tanks to control algae and mosquitos and have seen them frozen solid in ice only to see them still alive after the ice thawed.
