Deep-Fried Apple Fritters

Apple fritters are a favorite treat in Holland, where they're sprinkled with powdered sugar and sold fresh from street carts. But no matter where you are, now is the perfect time of year to serve up these crowd pleasers. Note: an apple corer will make your job easier.
DUTCH APPLE FRITTERS (makes 3 dozen fried apple slices)
6 large cooking apples
1 cup flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, beaten
1/2 cup milk
Oil for deep frying
Powdered sugar
1) Peel the apples and remove the cores. Cut into 1/3"-thick slices.
2) Combine the flour, sugar, baking powder, and salt.
3) Add the beaten egg and milk to the flour mixture and mix well to remove any lumps.
4) Pour the cooking oil into a deep frying pan to a depth of 1/2". Heat the oil. Then dip the apple slices into the batter and deep-fry until golden on one side. Flip and fry until golden brown on the other side as well. Drain on paper towels.
5) Sprinkle the fried apples with confectioner's sugar.
Voila! Tasty Dutch apple fritters are yours for the tasting.

Skillet Taco Supreme

Serves: 4-6

Finally something to use up all the broken tortilla chips in the bottom of the bag!
1 pound lean pork or beef, cut into small cubes
1 tbsp olive oil
1 can (16 ounces) refried beans
1 cup salsa
1 can (4 ounces) diced green chilies
2 large tomatoes, diced
2 cups broken corn tortilla chips
1 cup grated cheddar cheese
2 cups iceberg lettuce, shredded
1/2 cup sour cream
1/2 cup black olives

Using a large skillet, cook the cubed pork over medium-high heat for 8 - 10 minutes in olive oil, until browned and partially cooked. Add refried beans, green chilies, and salsa, stirring until blended. Cook until mixture reaches a near boil, then lower heat and simmer, stirring frequently to keep pork from sticking to the skillet. Check the pork for doneness in 6 - 10 minutes (there should be no pink in the center of the cubed meat). Remove from heat. Add tomatoes, chips and cheese, in that order. Cover just long enough to melt cheese. Top with sour cream, lettuce and olives. Serve immediately.

Oh my gosh, yes. I've been waiting for forever for my parents to start and finish supper(dinner). We're having burgers, hot dogs, deviled eggs, and something else I think. Mmm, I can smell those deviled eggs now.
