i would assume that after snape left it was mcgonagall was the headmistress for a time

on the today show is where she answered this. she said it would be someone completely new who we have not met (in the epilogue) because 19 yrs later mcgonagall was a little old

Snape was the headmaster before the war was won. McGonagall presumably took over but she wasn't in charge by the time Harry's children came to the school (perhaps, the war had tired her and she wanted a quieter life). It's not been said who was the Headmaster after her.

No, Snape was headmaster (i mourn and cheer for his death), during a majority of the 7th year, and after the war, JK Rowling has stated that a whole new character is the headmaster.

Inasmuch as she was Deputy Headmistress and the Headmaster was again dead, she would have been Headmistress, at least through getting the students home.

In her July 30, 2007 chat, JKR said that she did not remain Headmistress due to her age--who replaced her was not said.
