If you want to knit a sweater and can afford wool yarn, use that. It's nicer to knit and will keep you warm. Acrylic is cheaper, but it can also be too hot to wear, since it doesn't "breathe" (it keeps the hot air in and makes you sweaty). If you have a nice local yarn shop, ask their advice, they will show you options in your price range.

If you are planning to sew, rather than knit, wool fabric is still a good option. Fleece is acrylic and has the same problems as acrylic yarn.

Wool & fleece both are abt the same. Maybe a fleece lined wool sweater. :) The advantage of wool vs fleece is the drapability factor. Fleece has that cozy feel to it & wool can be itchy.
So the choice is up to you.

I have thought of fleece as a warm fabric
it acts as insulation,
and can be used in quilts.
Quite often the fleece is on the
inside of the fabric
shielding away cold air.

Wool will breathe which will keep you from sweating. It will also keep you warm if it is wet. Cotton or synthetics don't have this capability.
