cowboy hats out on the range protect the cowboy's head and ears from the weather.
If you've ever been to West Texas, you'll know that the sun is darn hot in the summer out there.
Men who wore black hats kinda naturally fried their brains a bit out there and so became bad guys. Cooler heads [white hats] usually stayed sane and thus were the good guys.

It originally goes back to the old Western movies where the good guy always wore a white hat and the bad guy always wore a black hat.

I think it's because in old black & white western movies, Roy Rogers always wore a white hat and it became a stereotype for the good guy
