Actually, the Black Oak and Nut Tree are in Vacaville. If you go that far east, you may want to try Hisui off of Monte Vista/Nut Tree. It has both a Teppanyaki and a Sushi area. The Teppanyaki is not quite as good as Benihana IMHO, but pretty good. (There is a Benihana just south of Benicia in Concord).
In Fairfield itself, the Hungry Hunter is good- it is off the Waterman exit.
In the area by the Blue Frog (next to the Travis Mall) there is also a Marie Calendar's, Mimi's Cafe, Macaroni Grill, Fresh Choice, and Red Lobster; so if you want any chain restaurant, that's the place to head.

My husband says definitely try The Blue Frog in Fairfield. And The Nut Tree has recently reopened, and then there's The Black Tree. All in Fairfield.
