Bacteria grows on food all the time, the fridge just slows down the bacterias reproduction. The point at which you visibly see mold is when the bacteria have multiplied so much that they are visible to the naked eye. Covering the food will hopefully create an air tight seal which stops any air changes and the introduction of new bacteria. You may also be wondering why jam and salted foods last such a long time in or out of the fridge, this is because bacteria has alot of trouble growing in crystals, like sugar and salt crystals.The freezer however will put the bacteria in a stasis where they will not reproduce until the food is thawed again.

The mold does not like the cold it presents a not happy to grow environment and when you cover food the mold can't get in.

Because mold and most bacteria grow best in warm and moist environments. Every living thing has it's optimum range and does poorly the further outside that range it is.
