Yes -- if a witness is even required. And as long as the spouse is not the holder of the PoA -- you cannot be an impartial witness if you benefit from a document

I don't think a spouse can serve as notary -- unless the state specifically allows notarization for family members -- but then, not all states require notarization of PoA either
