You can buy one kind of seed from the special seed store in the neighboring farm, the one you buy trees from.

The other types of mushroom must be harvested in the fall and then pitched into the seed maker.

you can buy shiitake seed from vesta's farm
go inside her shop after 4pm except monday

and for toadstool and matsutake, you must purchase seed maker first
after that, put them inside seed maker
you can find both of them in Autumn
