i have heard alot of people say that gun holders can carry 10 rounds, 100 rounds, 5000 rounds, when they carry or when they travel in a car. is this true?

I have never heard of ammunition limits other than for magazine capacities. Course I have lived in states where we have the right to openly carry firearms on person or vehicle without licenses. Only permit required is concealed. If you live in a state requiring a license, I imagine you are not likely allowed to have the firearm and ammo in the same compartment. That being gun in trunk and ammo in passenger compartment. I suppose you could run into a municipal fire code that restricted the ammo amount. Generally unfounded. Ammo in a fire, other than rimfire is pretty harmless. The primer pops and little else. Check with your gun licensing agency to be sure.

there is no limit, the question is why would you want to carry 5000 rounds

Depends on the state, but I've never heard of a limit.

do you mean while flying or just in their pocket ?
Most airlines limit ammo to eleven pounds in checked baggage.

That would be a lot to just have in your fanny pack. :-)
