any of the stage one puree veggies. make sure you wait a few days before starting a new one so you can tell which one may give them an allergy. my son is 6 months and hes love butter nut squash and sweat pot. and green beans. he actually likes them better than fruits i think because they have stronger flavor
NOtE: i did not start with carrot either, my ped told me to hold off on thosee because they can be constipating and hard to digest, especially for a breastfed baby

I always started my kids with yellow vegetables - carrots, squash, sweet potatoes [ start those last, so they won't think all veggies are supposed to be sweet! ]
I used to start new ones on sundays and wednesdays - enough time to see if they had a bad reaction to one, before I started another.
Then progress to the green ones - any pureed baby food is good - beans, peas, spinach. Again, one new food every three - four days. After greens you can start beets! [ wear something washable ].
Then you can progress to pureed meats - I just waited until they were nine months, so they could eat minced 'adult' meats. [ couldn't stand the smell of potted meats! Ick! ]
The less time they eat moosh the better - start introducing some finger foods at 9 - 10 months, so he/she can eat almost all adult food by a year.[ except the high allergen ones, of course.]
I kept them on baby fruit the longest - peaches in a jar is so much easier than peel and 'moosh'.
DON'T feed 'combo' foods [ mac and cheese, baby lasagna ] until you have tested all ingredients on baby first. I never used these for my kids.
When they get old enough for finger foods, give them a few leftover vegetables [ corn, peas, diced carrots, cut up green beans, broccoli ] for a 'snacketizer' - keeps them busy while you put food on table, and they learn to love vegetables!

My 6 month old loves her sweet potatoes with corn. Any of the 1st stage gerber foods will do or beechnut if you prefer. You want to make sure you only start with a few just in case of allergies to the vegetables. Dont forget the fruits as well...start off with applesauce or bananas. And once your baby is eating all veggies and fruits you want to make sure you give them a rainbow of colors a day.

Why does everyone always say start with carrots? They are one of the hardest vegetables to digest. Seriously, not to be gross but if it is something that comes out whole when you get the runs it isn't a great first food for a baby.
Other than that most veggies are fine.

I did sweet potato first, then peach, then apple sauce! One tips, you need a lots of bibs.

i gave my son string beans mushed.. carrots.. mushed and peas mushed... of course he likes the fruits and not the vegetables... just like kids lol.
