Because glass is an insulator of heat. It does not conduct heat very well. A glass jar placed in the hot sun will heat up on the sunny side more than on the side away from the sun. In so doing the sunny side expands MORE than the non-sunny side. Since there is a difference in the expansions of the sides and strain lines form inside the glass and eventually it will crack releaving the stress.

There really is no answer because it doesn't happen except in certain circumstances, such as the glass jar being sealed so that the gas inside can expand and break it. Have seen a lot of glass jars in the sun (for instance making Sun Tea) and have never seen one break in 60 years. Pouring something hot into a cup will also not break the cup unless the cup is quite cold to begin with.
