This seems to be related to organizational architecture. I was wondering if tipping large parties would somehow discourage free rider problems.....not sure. I guess it makes sense that the restaurant owner would have the decision right to create such a policy.

Because they are worried about putting in all that extra work and effort to take care of a large party and then getting stiffed on the tip afterwards.

Usually there are no separate checks so there would have to be a consensus of how much to tip. With multiple diners they may have different opinions on how good their service and meal was. Its just easier to add an average amount (usually 15%) on for a tip. If the experience was excellent you are free to add more and if it is a disaster, you can talk to the manager and refuse to pay the gratuity.

Because the wait staff has to work harder to wait on a large group vs. a couple of people. Not to mention the cook(s) coordinating all those orders to come out of the kitchen all at the same time. Think about it.

They've learned the hard way. Somehow when you get a big group of people together, people are less likely to tip. In fact, many times no one does.

They automatically add on a 15 to 20 % tip because the waitress has so much more work to do and also they get so little pay.

It is to make sure that the server gets there fair share.

Taking care of a large party requires much more work.
(Marginal increasing costs).

This will detract the servers ability to serve other parties so to make sure they don't get stiffed on what could a non diversified hour of work they guarantee them 15%.

usually when there are 5 or more; its customary to just include a tip on the bill, rather than have everyone tip (some more, some less)... sort of a social etiquette.

the only problem I have with that is when they don't tell you that the tip is included already...

To ensure they get a proper tip in all of the confusion of multiple checks.

Basically it's so the server doesn't get jipped.... because of poor tippers, and because of the amount of work it takes to serve a large party... you are always welcome to tip on top of the gratuity
