what happened to all the NFL europe players when they shut the league down?

I don't know for absolutely certain, but I would imagine that the players who were allocated by NFL teams continue to stay with their NFL teams. All other players would become free agents.

If they played for a German team, they were lined up and shot.

If they played for a team from Great Britain, they were given their tooth brush back and sent home on a double decker bus.

If they played for a French team, they were given a white flag and ordered to march down the street in front of everyone.

If they played for an Italian team, they were stuffed into the trunk of a Cadillac and taken out to the middle of a corn field and beaten and then left for dead.

who cares...it's football season here in North America!! Arena League, Canadian, European, USFL, XFL, they all sucked...and you cannot replace the NFL!!!
