Good grief, what a waste of duck!

Even the offcuttings are surely better used as part of a poultry ragout than sizzled to death on top of some dough.

Duck is a robust, tender meat that is best cooked rare and served within its own jus. Proscuitto (Parma) ham, a gentler meat, is surely the best for a good pizza.

Any Italians, esp. Italian chefs on board tonight. Comments would be appreciated.
