Volunteer to work for an organisation that provides outreach to the homeless
Cook them a nice meal.
When you're getting yourself a nice hot takeaway meal get them some too
Give them some money. Who cares if they use it for alcohol. If I was homeless I'd buy alcohol too.
Buy them some new clothes / blankets / bedding
Ask them if you can help them with anything
Smile at them
Dont treat them like they're invisible

You must be careful. I remember a story of my girlfriend giving a homeless person a sandwich and he literally threw it back in her face. He got insulted. Seems a little late for foolish pride at that point, but I understand. So first and foremost, say to yourself "would I want someone to do this".
If there is a specific person you want to help your options are more open. Talk to them or take them out to a lunch (nothing fancy, wendy's will do) and see what the problem is. There is a reason why this person is in the situation they are in. If you can address that situation you can get them back on their feet. Could be as simple as buying them a nice shirt and offering them a job. Could be a more complex reason (like a mental illness) that put them in this situation. If that's the case, help them find professional help. Just find out the problem and then help them address it.
If you just speaking in general, it's a little tougher. Putting a dollar in their hat does not help as much as you'd think. Remember the old adage "give a man a fish and he'll eat for a day, teach him to fish and he'll eat for the rest of his life" (or something close to that). The best thing you can do for homelessness in general is to find a NPO or charity that helps them and donate your time, ideas and/or money. Make sure it's a reputable place though. I keep hearing stories about these charities who only give 10 cents from every dollar recieved to the actual cause. At that point you are better off just giving the dollar directly to them.
If it is someone specific, msg me with some more information and I'll help you brainstorm some ideas that can help this person out. It's our duty as the forturnate to help the less fortunate.

There are many assistance programs that you can donate money or goods to, start with the Salvation Army or Goodwill Industries. If you're around town and see them near a fast food chain, ask if you can get them something.
Winter is coming so blankets are going to be needed. A blanket drive at work is helpful. Wool is best, as it stay warm even when wet. Jackets are needed too, all sizes. Families are living in cars, so baby supplies are needed.
Just take a look around and think of what you might need if you were there.

Tell him to get a job. Although there are exceptions (such as those with mental illness), most people who are poor/homeless are simply bone-lazy, have made bad, impulsive decisions, and would rather have nothing than work. I was a social worker for three years and some of the people I dealt with made me want to puke. I've never had any regrets about leaving that job.

bring them food you don't think you'll eat at home or if you are going out to eat get them a little something to go if you're gonna pass by them. Clothing can help out a lot - like sweatshirts or extra blankets or pillows you have can really help out a lot! Some homeless people get offended if you give them stuff (too much pride) so sometimes it's best to put everything in a bag and just drop it off as your passing by

Don't give them money. Give them something they can't sell for beer or drugs. Buy him/her a couple cheeseburgers. You can't do much, most homeless people make the choice to be homeless, so helping them in any other way won't work.

I'll usually ask one of the ones that hang out by the store asking for change if they have had anything to eat , if they said no, ill just buy them an egg sandwhich and a coffee or like a burger and water, its only like two dollars and now whatever money they got dosent have to be spent on food.

I lived in Austin where the homeless population is very large. They were everywhere. They really like it when you buy them something to eat and sit and talk with them. You wouldn't believe some of their stories. Most of them are really smart people that got into bad situations and couldn't pull themselves out of it.
