Hmm.. my experiences at daysummer camps, and daycares:
- Capture the flag.
- Dodgeball
- Sports (volley..basket..foot..base..-ball)
- Random outside games: hide and seek, tag, ghost in the graveyard, Mafia, sardines, or any other.
- Bring some arts in..crafts and art projects they can do if they want
- Cooking..buy indegredients and make simple cooking projects that those who participate get to eat.
Extras: just get some boardgames, books, music cds and a boombox or radio, TVs, videogames..foozball or pingpong tables..anything thats great for indoor activity if its raining
:]

Tell you what, get a couple of Xbox's, a couple of TVs and games of Halo, connect them all up and you would all have a blast at team play.
