Don't mix two names that end in -a. It sounds funny. I like Rose as a middle name for Valentina.

I love the name Valentina! For a middle name though, I wouldn't use one that also ends in -a... it rhymes way too much. My favorites from your list are Valentina Celeste, Valentina Rosaline, and Valentina Abrielle. Some of them would also sound better tweaked a little bit to get ride of the -a... like Valentina Selene would be really pretty. Something that ends in -line or -lene would especially sound great - like Rosaline or Selene. The more I say it, the more I like Valentina Rosaline the best! Whatever you choose, good luck with your baby!
