I have a book with a few different types of turtles in it. For almost all of them it says you can feed it low fat dog food. But there is differences between each type, some also eat fruit and green veggies, some berries, and some worms etc. Its hard to tell what kind it is by your describition. So i'm going to list them off for you and you should google image, or altavista image search them to see which one it is. If you get a match and would like to know all about their diet then plz e-mail me.

The link above is a tortoise gallery and it has about 200 species.

Try giving it a mixture of food. Leafy greens mixed with some fruit. Collard greens have a lot of vitamins.

The only tortoise native to Texas is the Texas Tortoise (Gopherus berlandieri). They eat vegetation.
It is a protected species. You should release it where you found it.

If it's not a tortoise, then it's a box turtle. You should release it.
