I would like it not to droop leaves, be fast growing, reach a maximum height of 4 meters and to have fruit or flowers to attract birds. Options and Photos would be great.

Eucalyptus spathulata is a beautiful little tree that looks like a soft green cloud to me. Some bloom red and some white. It has a pretty bark and is evergreen (of course). It also tolerates lawn watering and occasional "wet feet". Hardy to -11 C. No worries. Do a Yahoo Images search for photos.

Cherry trees will not grow in Brisbane. Too hot and humid.
I hate to tell you but all trees drop their leaves. Evergreens all the time (they replace them one by one) and Deciduous trees drop them all at one time.

I would choose a small variety of Crepe Myrtle,a Tibouchina or a Frangipani. None of these have much problems with leaves and they all flower beautifully.
