I don't know what Gore's problem is (why he hasn't come anywhere close to last year's production). But, if I owned him, my patience would be pretty thin about now.

Portis is an upgrade, but not by much. However, Chambers is going to be the main WR in San Diego starting week 8 (Chargers on a bye week 7). Whether he gets impressive numbers in that position or just clears out the defense (decoy) is still to be determined.

Hang onto Gore. At least for a while. You can still play Henry and Peterson. And, Selvin Young is going to take over in Denver whenever Henry begins serving his suspension. If Gore then comes around, all the better. But, if you make the trade, and Chambers doesn't produce and Gore finally breaks out, you're going to be kicking yourself all the way to the loser's bracket.
