In my contract of construction of a concrete swimming pool or spa, schedule of payments no. 4, "pay $xx,xxx after installation of the structure shell and internal plumbing".

I can see the structure shell but not the "internal" plumbing. How can I know they installed that ?

The internal plumbing would be all of the plumbing necessary to run the pool and spa that is attached to the shell. This would be the drain, the filter assembly, the water jets for filling and heating the pool, etc. It's all the plumbing that has to go into place before they install the shell, because it's integral to the shell and can't be installed after the shell is in place. It should probably include the penetrations for the lighting, too. Maybe they should have used the words "integral plumbing" instead.

If your pool shell has a drain, water fill jets, and the penetration for the filter assembly, then all of the internal plumbing is in place.

Do you have water in your pool or spa? If you do then they installed it. Besides you should be able to take off the trap door on either one and see the plumbing.

that is all the supply and return lines for the filtration system in the walls that is installed before concrete is poured. You will see the lines sticking out of the pool after concrete or attached to the rebar shell before pouring

That I believe would be the plumbing to the drain, filters, and other plumbing inside the pool.
