If you have lots of every thing to stay healthy with nutritionally except vitamin D you get ricketts. If you have every thing except Vitamin C you get scurvy.
The nutrient that is missing is the limiting factor.

It is the nutrient which is lowest in supply in proportion to demand.

In plain English, if the limiting nutrient in the soil is, say, potassium, you can add as much nitrogen to the soil as you want and you will not increase crop yields, not even a little bit. If you keep adding potassium yields will increase, until you reach a point at which some other nutient is the limiting nutrient.
