water follows the path of least resistance, meaning it finds the quickest way downhill and follows it. However, this rarely is straight, at least as far as streams and rivers are concerned. Google image search 'meander' and it gives a great picture of the bends in a river.

It doesn't. It moves to the lowest point until it can't move any farther.
