What makes Lobster taste so good?

When it's a good lobster cooked properly, with the texture right, it's heaven...sweet and luscious! Yes, the butter helps, too. Exactly *why* it tastes so good...that's a good question.

I had it once and it was over-cooked and tasted like a chewy sponge. When it's cooked properly, and is joined by quality drawn butter nothing can be tastier.
