How hard are they to install? Is rubber better than tar and pitch? We have a flat roof with a heavy pitch. There are no obstructions like pipes or ac units.

When you say rubber, are you talking about a single ply 50 or 60 mil? Which mil is better for a Southern climate where it gets 100+ sometimes in the Summer.

Right now we have a tar/pitch roof.

It is called Membrane roofing. It comes in rolls and you have to cut it to length. Where one section overlaps the another, you have to weld it with a large propane torch that you can rent.

A roof like you currently have doesn't last very long. Part of the problem is that tar melts in the sun, and pretty soon, you have a roof that isn't flat, but has places where puddles form.

A "rubber" roof is actually EPDM. It's a seamless roof, and it lasts considerably longer than a tar roof. Admittedly, it's hard to get *any* roof to last very long on a flat roof. A terne-metal roof with standing seams lasts longest, of course, but you'd have a hard time finding the material, or someone who knew how to use it, and if you did, it'd cost a fortune for your roof.

This will depend on how much you would like to spend.The sound of the way your roof is set up I would go with a app modified asphalt roof system. I would recommend heat weld application,so each seam,walls ,can be secured tight.
after the whole roof is complete Wait about 1to 3 months and install a fibered alum. coating to the entire roof to keep UV ray off and protect the roof. This coating you can do your self ,but the roof it self has to be done right and carefully as not to burn any thing down.So call a pro.

The EPDM roofing material is a rubber product. It comes in many widths so as to lessen seams where possible leaks would appear. I had this product installed about 15 years ago on a large building and was really satisfied with it. Their warranty was also very good. I had a minor problem around an AC unit and it was repaired very quickly.
