You just gave me a huge craving for Tiramisu & Amaretto cake! I love both, but I prefer Tiramisu. There's a restaurant near me that serves great fresh Tiramisu. Also, close to the Christmas holiday, a local store starts selling Kuchenmeister tiramisu, amaretto, and rum cakes that are so moist and delicious. Although the cakes don't have any fillings, they are still yummy, especially with a cup of tea or coffee. I need to find my will-power!

Rum Babas with Peaches is a good one can be done with any liquor and any fruit. * 1/4 cup lukewarm milk (105° to 115°) * 1 tablespoon active dry yeast * 1 1/4 cups all-purpose flour * 6 tablespoons unsalted butter, softened, plus more for the molds * 3 large eggs * 1 tablespoon sugar * Pinch of salt * 1/4 cup water * Syrup * 1 cup water * 1/2 cup sugar * 3-inch-long strips of lemon zest * 1 cup dark rum * 6 ripe peaches, cut into 1/4-inch wedges Directions The recipe can be prepared through Step 4 up to 1 day ahead; let the babas and syrup stand separately at room temperature. Serve with lightly sweetened whipped cream. 1. Make the babas: In a small bowl, stir together the milk, yeast and 1/3 cup of the flour with a fork until smooth. Set the mixture aside until small bubbles appear, about 10 minutes. 2. Butter six 1/2-cup baba molds or muffin tins. In the bowl of a standing mixer fitted with a whisk, combine the eggs, sugar, salt and the remaining flour. Add the softened butter and beat on medium speed for 10 minutes. Add the yeast mixture and the water and beat for 1 minute. Using a rubber spatula, scrape the dough from the whisk and scrape down the side of the bowl. With moistened hands, fill the prepared baba molds two-thirds full with the yeast dough. Set the molds in a warm place and let rise until the dough just reaches the rims, about 20 minutes. 3. Preheat the oven to 350°. Bake the babas for about 15 minutes, or until puffed and golden brown. Remove from the oven and immediately turn the babas out onto a wire rack to cool completely. 4. Make the syrup: In a small saucepan, combine the water and sugar and bring to a boil over moderately high heat; cook until the sugar has dissolved. Transfer the syrup to a bowl and add the rum and lemon zest. Let the syrup cool to room temperature. 5. Arrange the babas in a large, shallow dish and pour the syrup on top. Baste the babas with the syrup, turning occasionally, until they have absorbed as much syrup as possible without falling apart, about 25 minutes. Remove the babas from the syrup. 6. Cut each baba in half lengthwise and place on dessert plates. Surround the babas with peach wedges and serve.
