In HP and the Philospher's Stone - was Dumbledore intending on Harry to fight for the stone?

Yes, I think so. I find it unbelievable that Dumbledore wouldn't have suspected Quirrell to be wearing Voldemort on the back of his head at all. In fact, he would be happy to keep it that way, because it would delay the process of Voldemort regaining power.

"Deathly Hallows" does reveal that Dumbledore had masterminded a lot of the development, and there are many shades to his character.

However, it does not reveal everything. The editorial below is a great hypothesis into how it must have played out. This came out before "Deathly Hallows" and book 7 did confirm most of the predictions, while not denying any(leave it to readers' imagination).

My take on it was that Dumbledore hoped that Harry wouldn't have to fight for the stone because he knew that Harry would be ill-equipped to do so. Instead Dumbledore set up the Mirror of Erised so that Harry would get the stone without the fight. Dumbledore also knew, or at least suspected, that touching harry would be impossible for Voldemort because of the protection his mother gave him when she died .... and for other reasons revealed in book seven.

I don't think Dumbledore expected Harry to face Voldemort that quickly as the following shows:

"And then...well, you will remember the events of your first year at Hogwarts quite as clearly as I do. You rose magnificently to the challenge that faced you, and sooner--much sooner--than I had anticipated, you found yourself face-to-face with Voldemort. You survived again. You did more. You delayed his return to full power and strength. You fought a man's fight. I was...prouder of you than I can say." (OotP, chapter 37).
