basic tools, no plastics(that is a big one these days), use of levers and pulley vs. heavy machines, square nails, or no nails, you try and build a home out of dirt and manuer, ive seen it.

Depends on what kind of technology you have in mind. Technology existed since mankind was ever born. Technology is something no matter how primitive is. Technology is just a tool on how to do things and even how to do things easier.
Now on how they build building in the past, comparing from todays solution and problems, in the past they uses more worker, slavery, some worked sometimes against their will. Also animals where used in the past.
Also some places had other materials like clay, adobe clay, at this issue the problem was time, you take out the clay and you had to wait untill it dried up, and at the end they created the blocks to build buildings. Also similar procedure they used for building the pyramids since they had a lot of adobe in the area.
Materials, wood was used and is still used to construct buildings, ropes still used too. Animals where used together with human workers, something similar to the machines that is used today as in a substitution.
Many other stuff.
Maybe in the past, but, now in this time lime, construction has become something that you need to have your eyes wide open, very wide, and a lot of attention, since todays greed on trying to have money on your pocket, many projects may be corrupted same as the designer and other people in the circle, then they approve the construction, and Bam! in the future you have a huge accident that the building collapse, or the building is destroyed by flooding or the earth just moved.

What exactly do you mean by technology? Are you simply talking about having computers to aid in drawing blue prints and create designs? Or are you talking about power tools to make the work easier? Or are you going even further back to talk about before science was able to start figuring out the best ways to construct buildings.
If you go way back in time, building a home - or any structure for that matter - was mainly about using whatever materials you had handy to slap together a shelter.

I and my grand daughter just made an ancient Iraqis hut or "longhouse" for her school project.
It was a house made of sticks, about twenty feet long, the sticks were simply stuck into the ground, they were tied together at the ends with rawhide. Then there was birch bark laid on the sticks and this was piled end to end until all the gaps were filled and then, it was plastered with mud.
As many as twenty people would live in one of these.

We still build with same basic materials since coming out of the caves, wood and stone(cement).

when the first roof was put over there head even if it was sticks and leaves at the time that was technology
