Cheek cells are flat like tiles or roofing shingles. They are a perfect shape for making a covering over the inside of the cheek.

They are there as "sacrificial" layers of the superficial layers
They slough off very often and there is huge turnover, much like the superficial skin layers on your hand.
Being thin and long, they act as good protection for the dividing cells underneath, and they slough off easier perhaps because of their shape - they just peel off.
