Neuschwanstein (new swans castle) in Germany is beautiful but is a relatively modern structure with a steel skeleton. Built for mad king Ludwig ll of Bavaria the interior decoration was inspired by Wagner operas. For the most part it is less a real castle and more a huge piece of set decoration.
.
Windsor Castle on the other hand has parts that date back to 1066, and as the seat of the British royal family is more of a castle in the usual sense of the word so it gets my vote.

I'd go with Dracula's castle in Romania, also called "Bran Castle" . Technically it was only used by Vlad Tepes for a short time, but it's still pretty cool.

The other "most famous" castle might be the Disneyland one, since it's in the intro of so many disney movies.

Neuschwanstein for sure! Immaculate on the inside and out. They also have a very efficient system to tour it.
