my ex girlfriend is convinced i dont care.
We had been together for 3 years and said a few things i regret.
How do i convince her i do care?

mmh shouldnt be that difficult, dont ignore her, listen to what she says and just show her that you do care

If she's your ex, why are you looking for ways to convince her? Why not let it be and move on? Live and learn as they say.
But if you really do love and care for her, you could start by having flowers delivered to her home with a card that says "can we talk?"
Then just tell her. Let her know all the things you regret having said, and ask "her" if there's anything you can do to make it up to her.
You'll find out soon enough if she's the one who just wants to move on and is only using you as an excuse.
