we were camping one time right next to the water. we were watching the lighting and rain coming toward us. it was the coolest thing i have even seen. half the lake was clam and the other half was filled with raindrops. you could see the lighten hitting the water.

There are a bunch:
Watching my children being born (a bit icky, but cool none the less)
A humming bird nest
Watching a spider build a web
The St Edwards aquifer from inside a cave - I have seen this in two different places. One in Natural Bridge Caverns. anyone can see this with the commercial tour. However, the first time was many years ago in a now closed cave known as "Ezels" in San Marcos. At the bottom of the cave is a small room that is where the aquifer starts. The water is so clear that you literally have to throw a rock when you enter the room so you can see where the air stops and the water starts.
Scuba diving in Mexico in a small off the beaten path cove where the fresh water from an underground spring meets the ocean. There is a sort of rippling effect because of the mixing water and several species of fish that only live in those areas.
An octopus sucking my face mask off while diving in Cozumel.
A falcon bringing down a duck - To understand how amazing this is you have to realize that the speed and weight ratio is about the equivalent of a human jumping off an overpass to take down a motorcycle rider.
A golden eagle at the rim of the black canyon.
There are many more...

I would have to say:
The coolest thing ever was the birth of my children. Nothing can compete with that.
Other than that tho,
Once when I lived in Virginia, this old lady down the street had this little cottage..very small, with a little front yard. She was always feeding little animals from her porch. In the same month, her husband passed away and her little cottage caught fire and was almost totally ruined. She had lived there FOREVER.
Over the next 2 days after the house fire, everyone just came together without even being asked and a bunch of guys cleaned out the old burned part and then added on to it and by the time they were done, people had donated all sorts of time and money and labor and built her a new 3 bedroom house and even added a ramp, since she used a walker. Someone paid all the building permits and everything. It was truly amazing. The woman was in (happy) tears when she got out of the hospital after the fire. She lived for years after that and was always inviting people in to chat..she was an awesome cook. I miss that little old lady.

it was grade 11, school assembly. the principal was up giving a speech welcoming all the new students.
all of a sudden one of the students with a bright orange balaclava ran across the stage completely nude. The look on the principals face was absolutely priceless, watching the gym teacher and the other teachers running after the naked mystery streaker.
my favorite highschool memory
the whole school paused and then burst into laughter.
it was great.

At an Army research lab in New Hampshire I went into a building the size of an airplane hanger with an interior temperature maintained at -20 F. (They used to build and examine scale models of various terrains around the world.)
That was doubly cool!

I saw a outdoor magician make a semi truck disappear by using a huge curtain. We were allowed to walk where it had been, and all this was done within 20 seconds. He even brought it back at the end of the show.

The coolest thing I have ever seen was my sister giving birth. Make fun of me all you want, but, no joke, I thought that it would never work.
I didn't believe in natural child birth. I honestly thought that they did something that they didn't tell anyone, to make that baby come out...and then I saw it with my own eyes...and....wow.
My sister is my hero.

A couple years ago at work we saw a UFO in broad daylight. It hovered for hours. And we weren't the only ones...they talked about it on the radio, TV, etc.
Funny thing is, they never said what it was.
If it was a 'weather balloon' why would it be stationary for so long?
