Ethiopia except for a short time when it was conquered by Italy before World War II. (They had to give it back when they bowed out of the war - surrendered to the Allies - in 1943.)
Liberia is also a correct answer, but that was a country founded by a foreign power (the United States 1821 - 1847), so it was "colonized" by African Americans.
Depends how tricky your teacher wants to be.
I would say Ethiopia because it was never "colonized" by Italy during the short ~7-8 years it was conquered territory.

Liberia was colonized in the early 19th century by black people from the US. Therefore the European powers left it alone.

Usually, it is said that Ethiopia and Liberia were the only two country's to remain independent in the "Scramble for Africa" but I think it's obvious that Liberia wasn't exactly free of colonial influence.
