Naomi Judd's Meatloaf
(Makes: 10 Servings)

2-1/3 cups coarsely crushed
soda crackers
(1-1/2 tubes from package)
2 pounds lean ground beef
1/2 pound breakfast sausage patties
1 large egg
2 medium onions, chopped
1 medium green bell pepper, minced
3/4 cup ketchup plus
1/4 cup for the top
1/3 cup Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper

1. Preheat the oven to 325 degrees. In a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powdery.

2. Take any rings off your fingers and send them to me! In a large bowl, with clean hands, mix together all the ingredients except the 1/4 cup ketchup for the top. Mix thoroughly but lightly, being careful not to pack the meat too much. Place in a 13 x 9 x 2 inch baking pan and shape into a loaf. Cover with aluminum foil.

3. Bake in the 325 degree oven for 45 minutes. Remove the foil. Spread the top of the loaf with the 1/4 cup ketchup. Bake, uncovered, another 60 minutes. Let stand for 10 minutes before slicing.

here is my mom's recipe:

Myrtle's Meatloaf


2 lbs. ground beef (at least 20% fat)
6-8 thin slices of ham
8 oz. shredded mozzarella
1 small package chopped broccoli, rinsed and drained
1½ cups bread crumbs
1 large egg

Preheat oven to 350°.

Mix ground beef, egg, and bread crumbs in large bowl. Season with garlic powder, salt and pepper, mix well.
On well greased surface, flatten the meat mixture until it is about an inch and a half thick, and 10 inches wide.
Lay ham slices out, until the meat is covered.
Spread the chopped broccoli over the ham.
Sprinkle half of the shredded cheese over the broccoli.
Starting from one end, roll the meat up, like you are making a jelly roll. The filling may start to come out, but just poke it back in there. Pinch the ends of the roll shut.

Bake in 350° oven for 35 minutes. Remove from oven, sprinkle the other half of the mozzarella cheese on top of the meatloaf. Return to oven and bake for an additional 10 minutes until the cheese is melted.

This goes really well with mashed potatoes and gravy, and biscuits. Enjoy!!

2 pounds ground beef chuck or sirloin
3/4 cup oatmeal
1 each onion
1/2 cup ketchup
1/4 cup milk
2 large eggs
1 tablespoon horseradish
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup ketchup
1 tablespoon horseradish
3 tablespoons brown sugar
2 teaspoons prepared mustard

Directions
Combine first 9 ingredients; shape into two 7 1/2x4 inch
loaves.

Place on a lightly greased rack of a broiler pan; bake at 350
degrees F for 40 min.

Combine 1/2 c ketchup, 1 T horseradish and remaining ingredients; spoon over meatloaf and bake an additional 5 min.

NOTE May freeze the second loaf.

It is fairly one of the easiest things to make. Take 2 pounds of ground beef, add one egg, half a cup to a cup of rice, some salt, pepper, garlic(if you like) a minced onion and a can of diced tomatoes. Mix it all together well, then put it in a loaf pan and top with tomato sauce. Bake at 350 for about 90 minutes. Putting Mozzarella cheese on the top and letting it melt also is very good.

Do you want a meatloaf with crap or with taste.

If the second, get 1 lb. ground beef (lean) and 1 lb. roast. Put the roast in your crockpot with some beef bullion and let it cook for a couple of hours until it is so tender it shreds.

Tear it into pieces and mix with the ground beef.

Mix in 1 tblspn minced garlic, 1/2 tblspn black ground pepper, 1/2 tblspn sea salt.

Next, preheat the oven to 350 degrees.

If you choose to use prepared sauce, then at least a jar of Garden Medly spaghetti sauce from Paul Newman. I use rotel diced tomatoes (four cans) and mix in one freshly chopped roma tomatoe, two scallions (the green end) and salt and pepper to taste.

Now that you have the paste, go back to the meat and mix in two eggs, four tblspns of EXTRA VIRGIN olive oil and IF you must use a filler (I never do) use a bag of salad crutons (I prefer garlic).

Mix thoroughly by hand mixing in just a touch of the sauce and form in the pan you use. Ladel a small amount of sauce over the meat then cover with a loose tent of aluminum foil for 30 minutes. When the time expires, ladel more sause and remove the tent.

Let cook until done. Heat the remaining sauce on a low flame and serve the meatloaf with side sauce for dipping.

Sure -- here are two very good ones.

Turkey Meatloaf

2 lbs ground turkey
5-6 sun dried tomatoes chopped (more or less to taste)
1 handful of bread crumbs (i use fresh, but it doesn't matter)
about 1/2 cup Parmesan cheese
3 eggs.
pinch of garlic powder, if you want.
8-10 slices of prosciutto (Italian bacon get from deli)

mix all ingredients except the prosciutto, together. lay the prosciutto out on 15" piece of parchment paper, in two lines, overlapping pieces.

form meatloaf on top of the prosciutto, then wrap the parchment paper around the entire thing. bake for about 40 minutes on 350. This is wonderful with Italian bread, and it's really delicious!


Hamburger Meatloaf

2 lbs ground chuck
3 eggs
2 handful bread crumbs
2 small cans tomato sauce
1-1/2 c Ricotta cheese

Mix ground chuck, TWO eggs and one can tomato sauce together. Add a little onion powder and garlic powder, if you like (maybe 1/8 tsp of each).

In a separate bowl, mix ricotta cheese and one egg. (you can add a little parmesean or grated cheese in too)

Place 1/2 of the ground chuck into a casserole dish. Top with the ricotta cheese mixture, then put the rest of the meat on top, forming the loaf.

Pour 2nd can of tomato sauce over the top and bake at 350 for about 40 minutes, until meat is cooked.

This is the best and easiest meatloaf recipe ever - try it, I guarantee that you will love it.

1 can (8 oz.) tomato sauce, divided
2 lb. ground beef
1 medium onion, chopped (i use onion powder instead)
1 cup fresh bread crumbs
1/3 cup A.1. Original Steak Sauce
2 eggs, beaten
1/2 tsp. ground black pepper



PREHEAT oven to 350°F. Reserve 1/2 can tomato sauce. Mix remaining tomato sauce, meat, onion, bread crumbs, steak sauce, eggs and pepper; mix well.
PRESS mixture into 9x5-inch loaf pan.
BAKE 50 minutes; pour off fat. Top with reserved 1/2 can tomato sauce; bake an additional 10 minutes.

Ok , this is how I make mine:
2lbs. ground hamburger meat
1/2 onion chopped
1 pkg. broken saltine crackers ( not crushed)
1 egg
1/2 cup tomato sauce
garlic powder, salt & pepper 2 Tbs. garlic, 1 tsp. salt&pepper
I pkg. Lipton onion soup mix
1/2 chopped bell pepper.

mix all together in large mixing bowl with your hands
use a glass or metal 9x12 casserole pan lightly greased with
spray coating.
bake at 350 about 45-1 hour covered
Take out and drain all grease before you put the topping sauce on.
Topping:
1 can tomato sauce
1 can tomato paste
mix these two together

10 minutes before meatloaf is done, take it out and spread the topping to cover.
bake uncovered 10 min.

your done! Its a simple recipe but very good. I hope you try it!

Two and a half pounds of ground beef.
One medium onion, diced
One 12 ounce can of sliced mushrooms, drained
Two cans of tomato soup

Mix ground beef, onion, mushrooms and one can of tomato soup and shape into a loaf. Bake, covered for 1 hour on 375 degrees. Mix second can of soup, a few splashes of worcertershire sauce and a tablespoon of horseradish in a bowl. After the hour is up, baste the outside of the meatloaf with the misture and cook uncovered for another 20 minutes. Serve with your choise of sides. It really is delicious.

1 lb low fat hamburger (I use 7%)
2 eggs
1/2 cup bread crumbs
1/2 cup of oatmeal
2 tbsp worchestershire sauce
1/4 cup ketchup
1/2 small yellow onion chopped finely
garlic salt
pepper
1 package of dried french onion soup mix (optional, but always a nice touch)
For some spice - you can also add one package of italian sausage to it.

Put all of this stuff in a bowl together and mix it up with your hands - I put gloves on...
Then put the mix in a bread dish and cook it on 350 until a knife comes out clean when you stick it in the middle.


As a side note - this is almost the same recipe I use to make meatballs.. except I definitely add the italian sausaeg and about 2 cups of frenhc bread cut up into one inch squares....
then you form them into balls and bake them for 30 minutes on a cookie sheet on 350, then turn them over and bake for another 20 minutes....you can freeze these once they are baked and take them out later to add to spaghetti sauce.

You can also put instant rice in it and mushrooms - I don't care for either in it. I like the meat to be more "meaty."
