It would never be considered "self defense", as self-defense applies only to you. The closest you could come is "defense of others", which doesn't apply to dogs (although that wouldn't stop me if anyone EVER threatened my dogs and I had a gun handy). However, even Defense of Others isn't a valid court defense in all states.
In states that have property laws (I think Texas may be the only one, but I'm not sure), you may shoot if someone is threatening your property, but this may also be only applicable if he is actually ON your property.

pointing a gun at your dog? no. that would be felonious assault, or attempted murder by YOU (you are the criminal).
you do not have the right to defend a dog in the same way as you defend another human being.

YES! If a guy was pointing a gun at any of my animals i would shoot him 2! He diserves it. I just wouldn't of killed him. I would of shot him in the arm where his gun was. I know it must be hard on u . Thats all ur hearing and seeing everytime of the day. The gun shot...Where it was...When it happened....(I fell soooo srry 4 u!)

No. SELF defense. i.e. defence of yourself.
What you described is dog defense. You'd be facing a pretty legnthy prison sentence.
