Pretty much every culture had their own styles of folk as well; IDing composers would be a toughie.
Choral (especially church) music could be grouped as classical, or seperately.

there were regualr songs that became popular, for instance one song that comes to mind is "CAMOTAL" (sweet patatoes)sung by the Native Americans in the Spanish colonial California. It would have been popular in the late 1700's.
