To bleed profusely.
This image comes from hunting wild boar on horseback with a spear, an activity called pig sticking. While these hunts have been widely popular, this expression and associated phrases such as "to squeal like a stuck pig" meaning to shout loudly and shrilly and "to stare like a stuck pig" (now obsolete) meaning to gaze with wide open eyes were coined in the 19th century by British officers in India.

As an ex butcher the expression to bleed like stuck pig,came about ,when they were stunned then the jugular vein was cut the pig was then hung up to allow the blood to drain and this led to the meat being lighter in colour,the excessive bleeding was cause through the animals own pulse pumping out the blood as it was only stunned., This method was before the more humane slaughtering methods came in

when pigs go to slaughter, they are typically cut in the throat or stuck with a knife into the jugular vein, and they bleed out very rapidly to their death...
i think that is where it comes from... it means to bleed profusely...

Its from when you hunt a pig and spear it. It can sometimes bleed a lot.
