Alliance territory is kind of rough to level up skinning. Since you are level 12, try killing Young Goretusks. They are lv 12-13 and should be no trouble at all. They are usually just north of Sentinell hill.
Then move on to Goretusks which are lv 14-15. Those wander around just south of Sentinel Hill near the gnolls. They might be a little tough. But a hunter should be able to take 'em.
After that, there are Great Goretusks wandering around to the east as well as farther south of Sentinel hill. They are lv 16-17 and will be difficult to kill before level 14.
After that, go further east across the water to Duskwood and kill the lv 18 and 19 wolves there. I don't reccomend you try this until you hit at least lv 16.
Personally, I would reccomend you wait until you level up some more to level up your professions. They really don't make much of a difference in the early game and every hour you spend trying to figure out trying to find something is an hour you could be levelling up and getting to the real fun parts of the game, which come after level 40.

Basically any animal with fur or scales instead of feathers can be skinned. If it carries a weapon, usually it can't be skinned, but there are exceptions.
Boars are the most common type for early WoW players. But you also find wolves and hunting cats that can be skinned too.
Level 12 is a little low to be in Westfall though, I recommend just hunting south of Goldshire. If you have leather crafting in addition to skinning you can turned ruined leather into light leather at a three-to-one ratio.

One thing to keep in mind is that there is no specific mob that skind to light hide. Hides are "random spawns" while skinning, and can potentially come from any mob which is capable of producing light leather, which is around level 10-12, if I remember correctly.
Just keep killing and skinning, and you should get your hides.
