Well, it's more like friendly guy becomes a jerk ...
There's this guy, and used to be really nice, like he would tell me to join in with his convos, and he was respectful when he talked and stuff. I haven't talked to him in like three weeks, and now he's all bossy and "jerky." He would command me to do things without saying my name, and call me, "Hey! Pshttt. Do that!" He wasn't like that before ...
What happened? What bolted this change?

Maybe you didn't know him at all in the first place! Maybe you are seeing the true person he always was. He may have been trying to impress you before. Time will always tell about a person. This is a god lesson for you, remember the old saying, "you can't always judge a book by it's cover!"

Does he work out a lot? If so, he could be on steroids. That causes major mood swings.

seriously,there is no reason to his change in behavior.Human do change.i don't believe you won't change one day.(maybe his friends taught him bad)
