...Since almost all recorded information is done so electronically - computers, Intranet, etc. and no longer on paper/ink?

yes and no. although everything is done electronically....the data is stored somewhere magnetically/optically...now if we could discover a way to read that magnetic info w/o electricity, then we'd be game. now of course, we'll NEVER "forget" electricity production...and if we did...we'll discover it again in no time. a magnet can do wonders. :)
now if our memories were erased and we had no idea what magnets are and EVERYTHING related to magnet..then yeah...may be we'd be screwed.

There is still a lot of data on paper. We'd be in trouble for a few years, but I don't think it would be the end of recorded history.
