I've looked it up, but the terms are so confusing that I don't understand it! Would anyone be able to help me understand it with simple physics terms?

They're similar to a kind of cathode-ray tube found mostly in oscilloscopes, the electrostatically-deflected type. The ink droplets are given a charge so they behave similarly to the electrons in a CRT. They pass through pairs of deflection plates which carry a varying potential difference. The droplets respond by changing their direction and thus "paint" a letter or image on the paper. Wonky detail: The charged drops alternate with uncharged drops to prevent mutual repulsion.
