The simplest answer is that it's when there are many new species that have evolved from a single common ancestor. This often happens when a new species invades a new habitat, like a new island. For example, if a species of bird finds its way to an island it was previously never on, and it eventually evolves into several new species, that's adaptive radiation.

Probably the largest adaptive radiation ever was that of the small mammals beginning to occupy all of the niches left open by the extinction of the dinosaurs. Eventually they (we!) took over the planet!
